Taste-bud Journey: Grilled Swiss Cheese & Avocado Open-Faced Sandwich

During the pandemic, I am taking taste-bud journeys as I self-isolate rather than physical journeys. Here is my adapted recipe for a Grilled Swiss Cheese & Avocado Open-Faced Sandwich. It was inspired by being served a sandwich, long ago, with those ingredients at a delightful restaurant (no longer in business, I think) when attending the annual storytelling festival in Jonesborough, Tennessee. The main difference was they served the sandwich on toasted bread instead of a biscuit.



 

 














Recipe

  • A biscuit sliced in half, lengthwise.
  • Avocado that is mashed-up
  • Cheese of your choice such as Swiss cheese
  • Condiment of choice such as Mayonnaise and/or Butter



Procedure

  • Step 1: Split a biscuit in half, lengthwise.

  • Step 2: If desired, butter it and then add mayonnaise. I like to use mayonnaise made with olive oil.













  • Step 3: Add a slice of Swiss Cheese.
































  • Step 4: Add sliced-up avocado or mashed avocado. I like to use Wholly Avocado minis bought at Walmart as it is made with just avocado and no other ingredients.

  • Step 5: Top with another slice of Swiss Cheese. If desired, top this with the top half of the biscuit or enjoy it open-faced.

  • Step 6: Eat and enjoy!

Taste-bud Journey: Egg and Cheese Grilled Waffle

During the pandemic, I am taking taste-bud journeys as I self-isolate rather than physical journeys. Here is my adapted recipe for an Egg and Cheese Grilled Waffle. This was my version of getting a Egg and Cheese Biscuit at a short-order restaurant such as Hardee's. That was something I used to really enjoy doing back when I lived in Tennessee and long before the pandemic hit!



 

 
















Recipe

  • Waffle sliced in half, lengthwise
  • Egg scrambled together with your favorite flavor of cheese such as Colby Jack
  • Cooking oil to keep egg from sticking to frying pan
  • Mayonnaise or whatever other condiment you enjoy
 


Procedure

  • Step 1: Select your waffle and slice in half, lengthwise.











  • Step 2: Spray a frying pan with cooking oil. 

  • Step 3: Scramble an egg mixed with your favorite flavor of shredded cheese. I personally really enjoy Colby Jack cheese which is a mixture of Colby and Monterey Jack cheeses.
















  • Step 4: Spread whatever condiment you enjoy on your waffle such as mayonnaise.
  • Step 5: Top one half of the waffle with the scrambled egg and cheese mixture. Top with the other half of the waffle.






























  • Step 6: Grill this together in a sandwich grill of some type. Then, eat and enjoy!

Since I not only live alone, but have limited storage space, tiny grills fit into my lifestyle a lot better than larger grills. Plus, this was my way to save a little money. Each grill only cost about $10 each.

Also, this is my link for the Bisquick waffle recipe I used on a previous post. You don't have to use Bisquick. You can also use regular flour as part of your recipe. It is simply a matter of taste and what you happened to have available in your pantry.

Taste-bud Journey: Mixed-Fruit Shortcake

During the pandemic, I am taking taste-bud journeys as I self-isolate rather than physical journeys. Here is my adapted recipe for using a waffle as the base for a mixed-fruit shortcake. It was inspired by once going to a restaurant that served a strawberry shortcake on a biscuit instead of those sponge-like cakes. I really enjoyed that dessert and thought that a waffle could be a close second to my particular taste-bud and texture preference.



 

 















Recipe

  • Mixed fruit of your choice
  • Waffle
  • Whipped Cream


Procedure

  • Step 1: Either use a toasted waffle or grill one up fresh.
  • Step 2: Select your fruit combination of choice and blend them together.


















  • Step 3: To the fruit combination, pour in your desired amount of whipped cream. Stir together. Ice cream would also be an option.






















  • Step 4: Pour that fruit and whipped cream mixture over the waffle and enjoy!




FYI: There is actually a waffle hidden underneath that fruit and whipped cream. LOL!
